Cast iron griddle seasoning question

Some one gave me a rusted over cast iron griddle, one side is flat, the other side has ridges. If I season both sides in the oven. when I use it on my charcoal grill, will the seasoning on the downside burn off?
Thanks for the help.

You'll want to remove the layer of rust first, either physically by sanding or chemically with electrolysis, before reseasoning.

Yes, of course, but after I finish cleaning to bare metal and season, will the seasoning burn off the downside when it is over the charcoal?

It shouldn't. Make sure you have a few coats of seasoning.

I know you already know this.
After using, lightly oil both sides, the one you used and the one that was down.
Using it for 30 minutes to an hour shouldn't affect the downside much at all.
My belief is if you only use one side and keep seasoning the downside every time you use it, the downside will get a wonderful surface.

quote:depends on temperature and duration. You can burn off seasoning on a gas range if left on high enough heat for an extended period of time.
