Anyone make it? I tried this Meat Church recipe and it turned out pretty good. How do you make it?

2 lbs fish (Tuna or Reef Fish)
Half a red onion
Bunch of cilantro
4 limes, juiced
3 avacados
4 Roma tomatos
Jalapeno
Enough Clamato to barely cover it
Salt
Red Pepper
Mix it all together and let it sit in the ice box for a few hours, eat it on some fresh tostados.

We do it regularly with tuna or shrimp. Always good. Very easy.

I hate recipes that direct you to dump everything in a bowl and mix it together. There's no love or thoughtfulness and all the flavors get muddled together.

A big part of that come from watching how shrimp are processed on the boat.

Mexican style aquachile is delicious.
Citrus marinated shrimp with cucumbers, avocado, red onion, ciliantro, and a spicy "chili water".

I've made it a few times and it's been great.
Would prefer to do it with shrimp. Just cut them up and soak them in lime juice overnight.
fresh diced onions and tomatoes and pablano peppers as well.
Avocado and cilantro with some more lime juice.
I'ts a really simple dish.
The key to any good ceviche is this right here as a seasoning. I put this on it liberally.

That it is. There is a Mexican grocer near us who makes it on weekends. They warn you that it's hot, and they don't lie, but it's hard to stop eating it.

Do you have an example? Or just marinate the fish in the lime for so long and then drain it and add it to the rest of the ingredients?

Boil the shrimps in seasoning. I know the purists say use the acid from the lime, but it honestly takes way too long. For me it's diced red onion, 1 diced jalapeño, Cucumber, avocado, and tomatoes. Believe it or not, I find a couple of squirts of ketchup gets rid of the acidity. There really isn't a right or wrong way. Mine is more Costa Rican. Good luck, and enjoy!
