Chicken and Sausage Gumbo for 50?

I've been tasked with cooking one. 50ish adults. How many gallons should I shoot for? Anybody have the needed quantities of chicken, sausage and the trinity? I know how I'm going to go about cooking it, just need to know what to buy and how much volumn is needed. Tia

I made a gallon ziplock freezer bag that fed 6 people a couple of bowls each. And there's enough left for about 5 more servings.
I'd say a gallon yields 15 small servings. Maybe ten large bowls.
That's my guesstimate.

I would make about 5/6 gallons to be safe. You can always freeze it or eat left overs

10 bowls/gal = 5 gallons to feed 50. Kind of what I was thinking.

When I make it in my 30 qt. turkey pot it will yield 50-60 servings. It works out to 8-10 servings per gallon. Usually use 20 lbs. of chicken leg quarters, 4 lbs. of sausage, 6 large onions, 4 bell peppers, and 5-6 stalks of celery.

Doesn't Otis have a recipe for a gumbo for a crowd in the recipe book? Give it a look. Seems I remember him posting something. I know there was another thread on it and I'll try to find it.
Are they serving themselves or will they be served and what are you expecting per bowl-12 oz excluding rice, for example? Other food with it?

5 gallons gumbo
13 pounds of chicken(one pack each of boneless breast and thighs from Sam's)
6 pounds sausage
Eta: gumbo is cheap, no reason to cut it close

We put 7 rotisserie chickens
5 pounds chicken breast
5 pounds chicken thighs
8 rounds smoked sausage
8 pounds andouille
3 pounds hills hire farms smoked sausage
9 pounds onions
Bundle celery
12 bell peppers
1 1/2 cups minced garlic
3/4 baby food jar of file'
2 cups fresh green onion tips out the garden
2 cups fresh parsley out the garden
6 cups flour
4 cups oil for the roux
That fills an 80 quart pot about 3/4 way, we fed 90 men and had leftovers. I'd cut that in half and you'll be golden

5-6 gallons should be fine.

1 gallon per 10 people. So people saying 5-6 gallons would be correct. I usually buy those big frozen bags of chicken when making one (mine is usually made for about 20). So 3 of those types of bags would be safe. Sausage...I would say 3 of the large packages of sausage would do. For 20 I usually go one big and one small pack.

I agree that 5 gallons should work fine. I always make extra when I have certain number because I live in fear of running out of food. I'd go with 6. You'll probably have leftover with that amount.
