I use Stubb’s citrus and onion. Overnight in the fridge then grill, makes great fajitas. My neighbor uses Italian dressing with a couple limes squeezed in and her fajitas come out great too.

From Hornfans recipe collection:

Fajita Marinade

I've got a great one that I use for big tailgates and cookouts. For each two pounds:

2 tbsp soy sauce
2 tbsp red wine vinegar
2 tbsp Worcestershire sauce
Lightly cover with:
chili powder
cayenne pepper (ground)
black pepper

Squeeze a lime while cooking or when taken off the grill.

I do a Chipotle Chicken Clone recipe to make Chicken Tacos. Would make great fajitas as well

I always make my own and let it sit for at least three hours

Chili powder
Cumin
Paprika
Smoked chipotle powder
Cayenne
Salt
Pepper
Olive oil
Lemon
Lime
Cilantro

Fresh lime juice and a pack of taco seasoning. Marinate for at least an hour.

I prefer this to fajita marinade for chicken. It is more Mexican than Tex-Mex……..



But here is my home made fajita marinade for beef and chicken……

1 cup orange juice or - 2 TBS Orange Juice Concentrate+ cup water
1/2 cup veg oil
1/4 cup Red Wine Vinegar
1/4 cup fresh lime juice
2-3 cloves of garlic sliced thin
2 TBS Kosher Salt
1 1/2 tsp Black Pepper
1 1/3 tsp Chili Powder
1 tsp Garlic Powder
3/4 tsp Ground Cumin
1 tsp Onion Powder

3 pounds chicken or whole skirt/ flank steak

Take a gallon zip lock bag, and place inside and over the edge of a small saucepan, as you would place a trash bag in a trash can. Add all ingredients into bag. Seal bag and shake well to combine ingredients. Add meat, seal, and shake well again. Place bag in fridge and marinate 4-8 hours for chicken, overnight for beef. Agitate/ flip the bag a couple of times during the marinade. I like to put the bag into a pan that forces the marinade to cover the meat, versus just laying it on a flat pan.

I would suggest using the citrus juice in the marinade because it helps to temderize the meat. More important with beef than chicken though.

Thanks everyone for the recs and recipes. Rolled with Stubbs mainly over convenience. It was good. No problems but will likely try others in the future.

i prefer boneless skinless thighs. i just put a couple taco bell taco packet seasonings with some olive oil, and hot sauce and let them sit in that for a while. grill them

Chicken Marinade Ingredients:
• 6-8 Boneless Skinless Chicken Breasts
• 1 C Olive Oil
• Juice of 2 Limes
• 1 Jalapeno
• 1/4 Cup Cilantro
• 6 Cloves Garlic
• 1/2 C Soy Sauce
• 2 Tbsp Each – Salt, Pepper, Cumin, Cayenne, Chili Powder, Oregano, & Smoked Paprika

Directions:
1. Combine all the marinade ingredients in a zip lock bag. Add chicken and mix thoroughly.
2. Place in refrigerator and marinate for 2-12 hours
