Christmas party with a Mexican theme.

We're going to a Christmas party, and we have to bring a Mexican-ish dish. I was going to marinade and smoke a pork shoulder and do some pulled pork nachos, but I wanted to get some suggestions from the F&D gurus on any other Mexican dish suggestions. It should serve about 15 and be easily transported/heated up. TIA.

i have this enchilade recipe i've made before for christmas. you roll up ground meat (bird or cow), seasoned, with veggies, in a tortilla. make a white sauce with milk, sour cream and cream of mushroom. pour on top and throw shredded cheese on the very top. put them lined up next to each other in one of those roasting pans.bake for 30 min at 350. just put in a warming carrier and bring the roasting pan. they come out of the pan easy with a spatula and everyone likes them. it works better as a main dish, obviously.

you could make a 7 layer dip? maybe some mexican rice?

once i made homemade sopa...'s? and we ate them with honey. they were great.

i would say nachos would travel as well as eggs over easy unless you could do them on-site

if you are truly in the spirit of feliz navidad, make tres leches and then leave halfway thru the party to go clean some office building

All the mexicans and mexican wannabes I know eat Tamales at Christmas. I've been known to partake of them myself when I have the christmas spirit.

Are you wanting an appetizer or main dish? How much preparation time are you willing to spend? Do want a finger food, or something served on a plate, or in a bowl? Is there a certain food product you want to use? I can give some ideas based on these preferences.

Tamales are a traditional Christmas dish. There's a decent amount of work involved, but you make them in big batches and they should heat up ok.

enchiladas are the way to go. you can make them anytime, freeze them, transport them, etc

tamales are also a good choice but a pain in the butt to make

Tamales were the first thing that came to my mind, also. I don't like making them, though. I've done chili and tamales for a group of 60. Transported them warm in an ice chest and then loaded them into a crock pot/soup kettle thing to keep warm.

Tortilla soup or Taco soup is something that can be made in advanced. Hell it will probably get better the longer it sits and it can be easily transported and reheated.
