Cookies with almond extract

One of my favorite things in baked goods is almond extract. I love those little cakes (petite fours?) and anything with that strong almond flavor. I wanted to make a cookie but when I search for recipes I get a bunch of cookies made with almond flour. Can I just make a typical sugar cookie and substitute any vanilla with almond or just add almond along with the vanilla? Anyone know of any cookie recipes that would fit what I’m looking for?

I'll ask a family member for their sugar cookies. They have a very good almond flavor so I'm guessing they are doing what you're theroizing.

I LOVE almond extract. You can use it in your sugar cookie recipe rather than vanilla or use some of both.

The one dessert I've figured out for low carb is Ricotta cheese with almond extract, chopped almonds, and sugar substitute. I'm pretty sure that Dr. Pepper had almond extract and that is why I like it much more than Coke.

I'll save you some trouble. Rouse's has a new cookie line sold in their bakery department - different flavors, but the White Almond Cake Cookies are the best. 10 cookies for $4.99 (I think).
They are delish.

I have never made these, but I've eaten them several times. They're similar to the almond cookies that used to be served in Chinese restaurants.
Doug's Chinese Almond Cookies
1 cup lard
1 cup sugar
1 large egg
1 teaspoon almond extract
2-1/2 cups flour
1-1/2 teaspoons baking powder
Pinch of salt
36 blanched (no skin) whole almonds
Preheat over to 350 degrees.
Grease a baking sheet and set aside.
In a mixing bowl, cream lard and sugar. Add in egg and almond extract and blend well.
Sift flour with baking powder and salt. Gradually add flour mixture to mixing bowl, blend well.
Knead dough (add a few drops of water if dough is too stiff)
Divide dough in 3 parts. Roll each part into a long cylinder and cut into 12 equal pieces.
Form dough into small balls and flatten into rounds(1-1/2 inch). Press a whole almond in center of cookie.
Place cookies on prepared cookie sheet and bake until pale golden in color, approx. 15 minutes.
When cool store in closed container. Between each layer, put one section of paper towel sprinkled with a few drops of almond extract. (That's his secret because he loves almond cookies)

As Gris said, generally, you can sub for vanilla (any or all) in just about any cookie recipe. I like the combo especially in sugar cookies. Just like with vanilla, find the very best extract you can. It makes a difference.

1c butter, softened
2c sugar
3 eggs
2t almond extract
4c flour
1T baking powder
¼ t cream of tartar
½ t salt
red food coloring
Glaze
1 cup powdered sugar
½ t almond extract
2T milk
Cream butter and sugar, add eggs one at a time. Stir in remaining ingredients; do not over-mix. Add a few drops of red food coloring to the dough and swirl throughout.
Thoroughly chill dough. Measure dough out by the tablespoon; roll into balls.
Place dough on a cookie sheet lined with parchment paper; press each to flatten slightly with a glass/cup. Bake at 350 degrees for 12-14 minutes. Do not allow them to brown!
While cookies are baking, mix glaze ingredients. Glaze cookies while still warm.
Edited to add: you can leave the food coloring out.

There is a lady in New Orleans who made and, hopefully, still does the best and cutest almond sugar cookies. They were thin and crispy and delicious. Hard not to eat them like potato chips. I used to order from her fairly often, but you had to call months in advance especially if you wanted something near any type of holiday. My niece has come close to making them like hers, but hers are so good. She had lots of themes. These are just a few we bought for a wedding reception.

Fresh diced peaches with sugar and almond extract over vanilla ice cream for the win. Let the peaches settle and marinate for a while beforehand. Not a cookie, but damn good!

I ended up making a basic sugar cookie recipe and adding in almond extract. Hit the spot! I also got a thing of chocolate frosting and added some almond extract and mixed it together with a handheld blender. Made all the difference since the cookies came out a bit drier than I would have preferred.
