Cooking Red Snapper & Mangrove Snapper

I have some snapper from this weekend that I am going to clean tonight. What is your favorite way to cook snapper?


ETA: Unfortunatley, I dont have a little grill at my apt so I can't grill them on the scales

My favaorite way to cook small snapper is to scale them, filet leaving the skin on. Make a compound butter with some fresh herbs or seasoning, roated garlic, whatever you like...Saute in regular butter skin side down in a n oven proof skillet, after 2 minutes add a teaspoon or so of the compound butter to the top of the fish and put the skillet in a 450 oven for 5 minutes or until done.

the red's are about 15 lbs each and and 1 mongrove is 11 the other is small, I may try that

You could leave them on the scales and broil them in the oven.

I like to fry the small mangroves. If you can't grill they aren't bad baked. I like to slather a little olive oil on them and put some sliced and lemon along with your favorite spices.

I filet mine and leave just about 1/8" of meat on the scale side, it is mostly blood anyway. About the thickness of a hard cover book cover. Trim off any other red meat and put in glass baking dish. Melt butter, and add wostshire, lemon, garlic and seasoning. Add to fish, cut up bell pepper, and onion like an onion rings and put on top. Bake at 350 for about 20 minutes.

Get some french bread and dip in butter sauce while eating fish.
