Corn maque choux recipe

Corn, onion, red/green bell pepper, jalapeño, butter, heavy cream, hot sauce, creole seasoning?

Do any of you add tomato? Bacon? Fresh herbs?

I mix bacon fat and butter. But no bacon pieces

I use some bacon fat and a little butter as well. I use fresh chopped tomatoes. No cream. I've garnished with bacon on occasion. I always use green onions.

I keep mine pretty simple. I use corn, red bell pepper, and a little bit of onions. I sauté it with some butter and add a touch of masala powder. I don't use and cream or stock other than the milk from the ear of the corn, which I scrape out with a knife.

Fresh corn off the cob only, bellpepper and fresh tomato just a dab of butter.

If you don't have a good milky corn, maybe a few drops of milk.
