Cornish hens? What do I do

My mother in law shows up with 5 mini chickens. I'd never experienced these and was wondering what I can do with them? I have a rotisserie if that would help.

stuff them with "sausage" meat. you can cook them any way you like. I've eaten them in gravy, fried, and grilled. either way........it's all good.

I've had them cooked in the oven and on a rotisserie. Whoever had the idea of them cooked in a gravy is a genius. That sounds awesome.

My first thought. Of course, I put a ham on the smoker this morning so smoking is on my mind.

I stuffed them with smoked boudin and pepper jack cheese, roasted, and then glazed with pepper jelly the last few minutes of roasting.
Freaking fantastic.
Won't be much help if you're making them today since I assume boudin places aren't open.

I season well with Italian seasonings and make a butter sauce with garlic and other seasonings such as Tony's, etc and roast in the oven. My family loves them.
