Could you put a 13 lb. Brisket in the smoker at 180 and leave it overnight?

You need to be able to reach an internal temperature of 140F in less than four hours. At 180F your brisket won’t be very tender. You need an internal temp in the low 200s for that.

Was gonna crank the temp up and wrap the next morning once it hits 165.

I’ve never cooked one that low. I wouldn’t recommend it but that doesn’t mean it won’t work. Try it and let us know.
A good rule of thumb is 1 hour per pound at 250. So at 250, you’ll figure you’ll need a 13 hour cook.
Assuming you’re using a pellet or electric smoker to keep the temp constant overnight? If so, put it on at 11 pm. It should be ready around noon the next day and let it sit warm in a cooler until 5:00. Of course, if its a stick burner, then you can’t keep the temp constant without waking up.

I overnight mine at 200-215. Put it on before I go to bed, then crank up in the morning. Never a problem.

I put mine on the Rec Teq @ 9 o'clock or so at 225, usually hit 160 right about 7 in the morning, time to wrap.

I put em on around 9:00pm @ 190°

Why would 225 be too high? Smoking temps are generally 225-250 with 300 being the highest.

Just don’t put in on so early. Put it on at 9 or 10 at night.
