Crab Cake Recipe

Anyone got a good one? The best I’ve eaten seem to have mostly Crab and very few other ingredients. Also, pan fried or in the oven, don’t have a broiler. Thanks.

We use the one below quite often. Similar to TB's recipes in that it has little filler. You can add whatever other seasoning you like if you wish. We don't drain on paper towels. We drain on a rack so the bottom stays crisp.
We agree that the fresh bread crumbs make a difference, but you can use panko if you don't choose to make fresh. I don't care for the fine dry store bought crumbs for this recipe.
I've only used jumbo lump to make them, but I think claw would be very tasty.

Crab Balls or Patties
Ingredients:
2 lbs pre-boiled with seasonings lump crab meat
1 can (15oz) panko unseasoned bread crumbs
1 large yellow onion, minced
3 heaping tablespoons minced garlic
1 heaping tablespoon grated parmesan cheese
3-4 heaping tablespoons mayonnaise
2 eggs
1 stick butter (melted)
1/2 teaspoon worcestershire sauce
1 teaspoon red cayenne pepper (optional if you want it spicy)
Directions:
1. In a sauce pan melt the butter and then throw in the onions and garlic and cook until onions turn clear then put in refrigerator to cool.
2. Put the cold butter and onion mixture into a large mixing bowl and mix in everything but the crab meat which goes in last followed by the bread crumbs.
3. Shape mixture into balls or patties and place on a cookie sheet and freeze hard before bagging them up for freezer or lightly dust with fish fry for cooking right away.
Makes around 16-20 or so 2" sized round balls or 3" round patties.
Cooking:
pan fry with pat of butter until golden brown.
for baking just place on buttered baking pan and bake @ 350 degrees for 20 minutes until golden brown, then flip over and bake for 10 more minutes to brown the other side.
- this also works great with fish, shrimp, or crawfish. just leave out the parmesan cheese and use boiled crawfish or shrimp to make it.
- for fish i add salt and pepper to the fish and toss it into the butter and onion mixture for a minute when its almost done just enough to precook the fish.

NOLA.com published some recipes a while back from various places. If kind of combine the one from Mr B’s and Mr Lesters.

I make a few different versions of a recipe I found online. It's nothing earth shattering so find one you like and mess around with it.

Lump is all I make
but I also catch my own crabs too so it doesn't cost me anymore than I already spend to get them. I always put green onion in mine but I love green onion.

Always pan fry imo.

I use a waffle iron to cook mine so they come out evenly.
