Crawfish Bread

I saw this recipe last week on TexasBowHunter (Green Screen)LINK , copied it and just cooked with shrimp - it was larruping good and wanted contribute to the Board. Basically a knockoff of Copeland's Crawfish Bread. Adjust your oven time to your taste. Pics on TBH.
CRAWFISH BREAD – 35 MINUTES
a loaf of french bread
a little mayo
a little butter
big handful or cup of sweet onions or shallots (I prefer shallots)
heaping tablespoon or 2 of minced garlic
bag of frozen crawfish tails (thawed) or diced Shrimp
big handful or cup of minced green onion tops
small handful or a couple tablespoons of minced fresh parsley
cajun seasoning maybe a teaspoon or tablespoon to taste
pack of cream cheese
small bag of grated parmesan cheese
small bag of grated pepper jack or monterey jack cheese
smoked paprika (optional)
Heat the oven to 400 degrees.
Cut a loaf of french bread in half cookie sheet cut side up.
Spread a thin coat of mayo over the bread and sprinkle a little parmesan cheese on top of the mayo.
Sauté maybe a cup of sweet onion or shallots in a tablespoon or 2 of butter.
Once they're clarified toss in a heaping tablespoon of minced garlic or 2 depending on taste. The garlic cooks quick so before it can burn add a bag of crawfish tails, a cup of green onion tops and a small handful of fresh minced parsley. Season with cajun seasoning to taste.
Then add the block of cream cheese and stir until all blended and remove from fire.
Pour the mixture evenly over the bread and top with the pepper jack cheese. Then sprinkle the parmesan on top and paprika. Place in the oven for about 15 minutes until all the cheese is melted.
