Looking to grill some fish and wanted a cream sauce recipe to go on top. Thanks!

I always do a crawfish/andouille cream sauce

The best sauce is made in the pan used to cook the fish. your grilled fish dish will have no fish flavor in the sauce.
Lemon Cream Sauce
2 Tablespoons Butter
1 teaspoon finely chopped shallot
1 teaspoon lemon zest
1/2 Tablespoon lemon juice
1/4 cup Chardoney wine
1/4 cup heavy cream
pinch of salt
Pinch of white pepper
1 Tablespoon chopped parsley
Heat butter in sauce pan until you see a sheen form
add shallots and cook until tender. add lemon zest, juice and wine. continue heating to reduce wine by half. Add heavy cream, salt and pepper. Taste for seasoning
You can do a version of this with garlic, by adding 1 teaspoon of minced or thinly sliced garlic to the sauce a the end of the shallot sauté.
Garnish with a sprinkle of parsley on the plate.
You can also add crab or shrimp to the sauce before adding the cream
There is an excellent Tarragon Cream Sauce in this post.
