Creole Okra

Looking for something to do with those Okra and Tomatoes from the garden?

Treedawg's Creole Okra

2 tbsp. olive oil
1 c. chopped onion
1 c. finely chopped fresh parsley
1 c. finely chopped green onions
1 c. finely chopped bell pepper
2 c. peeled, chopped fresh tomatoes
1 c. tomato sauce
2 tbsp. minced garlic
2 tbsp. soy sauce
1 c. dry white wine
1 lb. smoked sausage, sliced 1/4 inch thick
10 c. okra, sliced 1/4 inch thick
Salt to taste
Louisiana hot sauce to taste

1) In a large, high-walled skillet or Dutch Oven, heat the olive oil over medium heat, and saute the onions, parsley, green onions and bell peppers until the onions are clear.

2) Stir in the tomatoes, tomato sauce, garlic, soy sauce, wine, and sausage. Cover and cook over medium heat until it comes to a boil, stirring occasionally.

3) Stir in the okra, salt, and hot sauce, Reduce the heat to low and simmer covered, stirring occasionally, until the okra is tender, about 45 minutes.

an easy on is:

1 yellow onion diced
2 cloves garlic minced
1/2 Ib. Good smoked bacon
4 garden tomatoes diced
10-15 okra cut into rings
2 Pinch Chili Flakes
Salt & Pepper to taste

Process: Render Bacon until almost crispy, then add onions, chili flake, and garlic. Saute until translucent. Add okra, salt, pepper, and tomatoes reduce heat to mid-low and cover, stirring occasionally. 30 minutes or so, when it looks done it is! Bon Appetit

yes, many times......I have been using the recipe for years.........
