Crystal hot sauce reduction

Had a pizza at oscars last night on Perkins (pizza is real good)
And if had a crystal reduction drizzled over it

Is this as simple of crystal and butter?

Can anyone share their recipe?

I want to use this as a wing sauce

I've been wanting to know if the pizza is good.

Email them for the recipe for the reduction. They've shared some of their Nino's recipes with me via email.

They probably reduce a good bit of Crystal and then whisk in some butter. They could have other ingredients, but since I haven't tasted it, I wouldn't know.

If it's crystal and butter reduced, that's exactly how I make my buffalo sauce.

A little garlic powder and Worcestershire

Google Palace Cafe's andouille crusted fish recipe. I think the sauce is similar.

The Palace recipe says:

Cayenne Butter Sauce

3/4 C Crystal Louisiana's Pure Hot Sauce
1/2 lb Butter, cold, diced

To make cayenne butter sauce, reduce hot sauce by 1/3 over medium heat. Reduce heat to low and whisk in cold butter a few pieces at a time. Whisk continuously until all butter has been added. LINK

How do you get that much Crystal out of the bottle without getting carpal tunnel syndrome? Break the neck off?

There is a plastic ring that you can take off to pour. Love me some crystal buffalo sauce.

Another variation

Crystal Hot Sauce Beurre Blanc

5 oz. Crystal Hot Sauce
Pinch Garlic
Pinch Shallot
2 oz. Heavy Cream
1 1/2 lb. Butter

Saute garlic and shallots in a pan with a little butter. Add Crystal hot sauce and reduce by 75%. Add cream and reduce again by 50%. Slowly whip in softened butter a little at a time.

That's 6 sticks of butter for those of you following at home.


The only thing I go that heavy on is BBQ shrimp. That's not to say I wouldn't try this. There's nothing in it I don't like.

I make a Crystal butter.

One quart heavy cream, one small bottle Crystal hot sauce.

Put quart of cream in stand mixer with whisk attachment and turn on low, then gradually increase to high speed for about 14-16 minutes until it turns into butter. Drain off buttermilk, add bottle of hot sauce and blend well another minute or so.

Remove, wrap in cheesecloth and squeeze rest of liquid out, form into roll or ball, wrap in plastic wrap and refrigerate.

2 cups Crystal butter, 2 cups buttermilk.

Heat a pan, pat of crystal butter, 2-3 beaten eggs, soft scramble. Crystal scrambled eggs.

Pat on top of a steak, salmon, redfish, chicken, green beans, asparagus, mashed and baked potatoes. You get the idea.

Add fine chopped herbs in lieu of Crystal to butter or roasted garlic.

My " go to" mix for wings is a bottle of Crystal, a bottle of Trappey's Red Bull, 2 T Tabasco , and two sticks of butter. A pinch of garlic powder and you're good to go.

I do something very similar, but with Louisiana. Never tried Crystal. How different are they?

Made two batches last night. Needed one for the two guys that like more heat. Added some habanero sauce I got from Cozumel. The sweat was rolling nicely.
