I prefer eye of round sliced across the grain and cut about 3/16" thick.
I'll put all the slices in a stainless steel bowl and add Slap Ya Mama, Garlic Powder, Black Pepper, Cumin, Chili Powder, Smoked Paprika, Soy Sauce, Worcestershire Sauce and some of my homemade Habanero Pepper Sauce to the bowl.
I toss the meat by hand until all the pieces are well coated with the spices, cover the bowl and put it in the fridge to sit overnight (12 hours minimum) then smoke it the next day till done to my liking.
I don't smoke it until it starts to break when bent. I like it with just a hint of moisture still in the meat.
One eye of round roast generally gives me between 45-50 slices. I'll put some in the freezer vacuum sealed for later use.

I use a splash of Dales, Allegro Hickory Smoke, Worcestershire, soy sauce, Liquid Smoke, ground red pepper, allspice, garlic powder, and onion powder. Marinate overnight. When I lay it out on the racks to dry I sprinkle black pepper on them.

My favorite jerky that I have ever had/made was the backyard brand jalapeño flavor from academy. Bar none. I ate so much of it that I had to not buy it anymore because I was salt curing the inside of my mouth lol.

I've never made jerky, but I received some for Christmas one year that was seasoned with Montreal Steak Seasoning. It was great!
