I've seen a few of the Dooky Chase episodes and the are interesting. The stuff they are cooking are generations old family recipes tried and true in the family business.

He's the best. He's a former chef/owner who had a cooking school, so he really breaks things down into the whys and not just the hows. Plus he doesn't give any fluff or artificial nonsense you can get from many cooking shows. He's also quite an engaging personality.

I used to like Sam the Cooking Guy, but about a year ago he started to overedit his vids to the point they are unwatchable. It's too much for me, but cooking wise he brought some good things to learn.

James Makinson does some good vids, but the problem is most of his stuff are the annoying reaction ones. Those are super popular on YT for some reason, so he's trying to catch the popularity of those.
