Favorite largemouth bass recipe

just like my dad taught me:
rub with yellow mustard and lemon pepper then bread with Louisiana Fish Fry and toss in the deep frier.
and we used to catch a TON of them back when Toledo Bend was actually a good place to fish.

Toledo Bend is one of the best lakes in the entire south right now
and my recipe is soak in milk and hot sauce for a few hours, then batter, either store bought (must be mostly corn meal) or make my own, then into the fryer at 375

Oh okay, that's good to hear. I haven't fished down there in a couple years. My uncle lives on the lake near Lanan Bay and says he has been having trouble consistently finding fish over the last few years. Maybe he's not in the right area of the lake. Our camp was at Solan's (right near Zwolle) and I remember when the lake level dipped at the same time they had a bad hydrilla problem back in the day. That was a rough stretch trying to find some big ones; especially since I've always been a shallow water guy. Sitting out in the middle of the reservoir with a jig isn't my cup of tea

Catch bass
Fillet bass
Mustard then tony's on fillets
Batter with Oak Grove Smokehouse fish fry
Put in hot grease
drink 1 beer
Take out of grease
drink 1 beer
start eating

Bass is really good and simple is the best way to go. I cook it about twice each month and have done it every way under the sun...but this is what my family likes and it is super easy.
Soak in salted water in the frige for an hour or so. Then drain the water off and batter and deep fry at 350 degree's till they float.
The batter I use is:
2 cups yellow corn meal
2 tbsp salt
1 tbsp paprika
2 tsp pepper
1 tsp of garlic powder
The only thing that I do that is out of the norm is this:
I like to cut my fillets into about 2" size pieces and sort them into 2 batches....a "thin" batch and a "thick" batch. It helps the fish cook faster and more evenly plus with the smaller size pieces you get more batter in each bite.

Cut the head off, scale and gut the fish. Sprinkle fish with tony's/slap ya mamma/etc..., cut slits in the fish and stuff with pats of butter and garlic.
Coat the fish in EVOO (not a lot, just a lil bit), put in a fish basket, and grill it. Mmmmm. Delicious.

If you have big filets then I like to do them pan fried with a trout almandine recipe for the sauce.
Or for frying it is mustard/louisiana fish fry

They'll work on just about any flaky white fish you catch.

Yep. Have prepared catfish, bream, white perch, etc.. the same way and all came out good.

When fresh. Less is best. Ice water. Batter. Fry. Do NOT overcook. When the grease starts to quiet down they are done. I cut into thin pieces as someone else said.
Frozen, mustard, beer, n Tony's in a bowl. Throw pieces in there for a little while. Batter. Fry.
Key to frying fish is to only put 8-10 small pieces in at a time so you dont lower the temp of the grease too much when u drop them in

Other than deep frying... I pan fry in olive oil . Bake. Microwave. BBQ. Blacken. Courtbullion. Fry n top w étouffée

1) Release the bass
2) Buy some farm raised catfish.
3) Sprinkle on some tony's and batter in Louisianna Fish Fry.
3) Fry in Peanut Oil@ 350 untill they float and the grease settles down

Hydrilla problem at lake Guntersville = excellent rat fishing for huge largemouths. Lake record was caught on rat on top of hydrilla.
