I like to hit my chicken andouille gumbo with it to make it cream style. Everyone says it’s the best gumbo they’ve ever had.

One way I really like to use it is when I'm braising short ribs or pork shoulder and it comes out of the oven, I remove the meat carefully and use the immersion blender on the braising liquid to blend down the carrots/trinity/etc. that's in it while reducing rather than just reducing.
It makes the gravy much thicker and flavorful, and saves you from having to reduce forever.

Look for a blender hollandaise recipe. Easily made with the immersion blender.

I like to cook cauliflower/cauli rice in a little chicken broth until it's real soft, then hit it with an immersion blender. Add a touch of cream/ half & half, and it's a much lower calorie/carb chowder base. Shrimp & corn, chicken & spinach, or any other creamy soup you want.

You might be surprised how creamy it comes out without the addition of cream
That being said I do put some finely grated parm in my blended cauliflower soups

Potato/Leek soup.
I also use it when I make Broccoli/Cheese soup to blend in the onions and broccoli stems I cook down prior to adding the small pieces of the broccoli head and cheese to finish it off.
