Favorite Slow Cooker Chicken Breast Recipe

Been in a rut lately. Need to try something a little different. Recommendations appreciated!

My wife usually makes chicken chili with them in the crockpot.
To be honest I think chicken breast doesn't turn out too great in a crock pot. I much prefer thighs if cooking for a long period of time.
The best chicken breasts I've cooked lately have been in an air fryer. If you have one then I'd suggest that.

3-4 chicken breasts
Can of black beans
about a cup of Pace Picante
You can get the packet of "slow cooker Fiesta Chicken" or you can just add normal taco seasonings (salt, pepper, plenty of cumin, paprika, garlic power, onion powder, chili powder)
put it all together in the crock pot and cook on low for about 5-6 hours, or high for about 3 hours. Really have to pay attention to the temps though b/c if you cook too long then the chicken will be dry and just rip apart. At that part you might as well make some tacos.
Top the chicken with shredded cheese right before you are ready to eat. A little sour cream to go with the chicken and black beans is a nice touch, maybe some jalapenos if you'd like as well.
Very simple and basic meal that is tasty. You could add some Spanish Rice as well.

Not breasts or slow cooker, but you mentioned a rut and this is easy and decently healthy - we've been doing chicken piccata with boneless thighs and I'm loving that.

3-4 chicken breasts, 1-2 blocks cream cheese, a packet of Hidden Valley ranch seasoning. Cook 6-7 hours on low. Shred chicken, then add in shredded cheddar cheese, bacon and green onions and cook for another 30 minutes. Eat as a dip, on a sandwich or wrap or just on its own.

My wife is the one who brought it into our rotation, so she does this one. A few things I have picked up on that contribute to how I like it: 1) use thighs, 2) slice up and de-seed the lemons after juicing, include in the saute - I eat a piece (rind and all) with every bite, it's awesome, and 3) real butter (there isn't much in our recipe, maybe 1 tbsp.

I always use breasts for this, and just guesstimate how many thighs they'd equal.
Crockpot Balsamic Chicken
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons dried minced onion
4 garlic cloves, minced
1 tablespoon extra virgin olive oil
1/2 cup balsamic vinegar
8 boneless, skinless chicken thighs or breasts
sprinkle of fresh chopped parsley
Combine the first five dry spices in a small bowl and spread over chicken on both sides. Set aside.
Pour olive oil and garlic on the bottom of the crock pot. Place chicken on top. Pour balsamic vinegar over the chicken.
Cover and cook on high for 4 hours. Sprinkle with fresh parsley on top to serve.

4 chicken breasts, large jar of Mateo's mild salsa (from Costco usually, or do 2 small jars), 2 Tbsp cilantro, 4 limes squeezed

A great trick to make any chicken breast taste 10 times better is to use thighs.
