Fishball recipe

Need a good recipe from beginning to end

Fish Balls or Patties
Ingredients:
2 lbs pre-cooked & broken up redfish or drum meat
1 can (15oz) panko unseasoned bread crumbs
1 large yellow onion, minced
4-5 heaping tablespoons mayonnaise
2 eggs
1 stick butter (melted)
3 heaping tablespoons chopped parsley
1 teaspoon red cayenne pepper (optional if you want it spicy)
Directions:
Note - it is much better to poach the fish in some water seasoned with crab boil seasoning
1. In a sauce pan melt the butter and throw in the onions and cook until onions turn clear then put in refrigerator to cool.
2. Put cold butter and onion mixture into a large mixing bowl and mix in everything but the fish goes in last and then the bread crumbs.
3. Shape mixture into balls or patties and place on a cookie sheet.
Makes around 16-20 or so 2" sized round balls or 3" round patties.
Cooking:
pan fry with pat of butter until golden brown.
for baking just place on buttered baking pan and bake @ 350 degrees for 20 minutes until golden brown, then flip over and bake for 10 more minutes to brown the other side.

Reminds me of the Salmon patties my FIL used to make back in the day.

Use the box of mashed/ flaked potatoes to mix your fish with. Like hamburger patties. You can fry them or you can cook them. In a sauce piquante. Your choice.

A favorite of me and my people:
Catfish Cakes (aka poor man’s crab cakes).
2 lb catfish, seasoned and cooked to 145 degrees, then cooled and broken up
Combine and blend:
4 eggs
5T mayo
1T Dijon mustard
1T W Sauce
2t Old Bay
1/2t salt
1/2c fine-diced celery
1/4c chopped parsley
Add fish and 1c panko or saltine crumbs, more if needed. Refrigerate.
Form patties, cook in a little oil until blackened on both sides.
Eat as they are, throw on a sandwich, serve w/ greens and remoulade, tartar, or hollandaise.
Make them balls if you wish…but the more surface area, the better.

My dad used to make these "fish biscuits" and I don't have the recipe. I know the recipe called for fresh poached fish, mayo and flour and he would make biscuits and bake them, but I know I am missing key ingredients. I have never found a recipe for them and this looks similar, except my dad baked his. Any one have a similar recipe to this? Perhaps it was this and my memory is failing me.
