I went to Costco today with the intent of buying skirt steak. It was $14.99/lb. I left empty handed and defeated.

I looked up a couple of these local ranchers. Brisket was around $9/lb, NY Strip $25/lb, ribeye $25, whole chicken $25.

Has been out go-to for the last year.
Sears really well and cut diagonal to the grain for a pretty tender bite.

Rouses had prime sirloin steaks on sale last week for $6.99 lb. and that would have worked out fine for the OP's dish.
No way in hell I'd pay $14.99 a lb. for skirt steak.
That shite use to be so cheap. Kind of like chicken wings years ago when stores were practically giving them away until some goomer cooked them and added sauces to coat them and they became 'Buffalo Wings"........
