For a large crawfish boil, how many pounds per person do you estimate?

This is for a crawfish boil in Houston...around 60-75 people...less than half from Louisiana...mostly 40+ year old adults...not a crawfish eating contest.
4 pounds per person?

3-4 for people that don't generally eat them. 5-6 for seasoned vets.

I go 5 in mixed company...4 could be fine.

we usually do 5 but you'll probably be good with 4 since there will most likely be more than a few that don't eat much

4-5 lbs per person. Are you doing veggies and/or sausage too?

I would do 3-4 lb PP and add corn, potatoes, and sausage. I doubt every person their will eat 3 pounds.
And Ill be waiting for my invitation via pm

3.5-4 is about right. I would never do over 5 unless this was a sausagefest party. That would produce way too much waste. If providing lots of corn and potatoes and other sides I would stick to 3.5 especially if not all live in Louisiana. Non LA natives I would figure abour 2lb per person MAX.

I always do 5 pounds per person and rarely have much leftover but when I'm contracted for a certain number of people it's my responsibility to make sure we don't run out. I do have customers that will request less or more per person or a certain number of pounds, then it's on them.

4 lbs a person is a good number.

Yup. Too many people don't put enough corn and potatoes in their boils.

If you take in details like this and you still say 5lb? Seriously? You have to also figure that of the amount close to half will be women. Only Louisiana Women will ever come close to eating 5 lb of crawfish.

5. women will eat 3-4 and men will eat 5-7

I would go with 5lb, unless you are serving other items(burgers/dogs)

I've used 5 per person from San Antonio to Washington DC

And you have the same amount of leftovers using the same amount with the same number of people LA vs outside of Louisiana? Im not buying it.

and so the crawfish threads begin.........................................

Cook less than 5 lbs in mixed company that like crawfish on an average basis, no matter where you are, and you've screwed up.
