Fried shrimp heads

I saw a thread on these (on this forum I think) anyway I saved the heads from some fresh shrimp, and we fried them up with the shrimp the other day. Damn!! These things are like shrimp candy, especially right out of the fryer.
I spent 25+ years in the shrimp business...sales... but interacted with a lot of the shrimp Plants. Never heard or had these in all those years.

Sushi place I used to go to would fry those up and serve as lagniappe at the bar. Very good.

yep, we call them deep fried spiders
smaller ones are easier to eat but we only do it for the big friers, they are a bit crunchy though because the legs are bigger

Yep, that is how I know them. First had them almost 40 years ago. Best if using large heads to remove the inner part and toss the outer shell, hit them with cornmeal and flash fry then season for the win.
I ate so many the first time I had them I almost got sick from being overstuffed with fried goods.

The belly. Unless you get a bunch of softshell shrimp. Then you are frying the whole thing.

after deheading your shrimp, you pull the heads shell off, and then you fry whats left, the legs and theres a bit of meat and fat there as well.
they look like spiders after they are cooked

ah, ok
i guess it could work like fish fins if you fry it dry enough but i didnt realize he didnt pull the top shells

i never left the head shell on but that must have been a lot crunchier than it needed to be, but until you know you dont know

I love em. On the big uns you gotta clip the legs and eat the belly. The little ones it’s all good eats

Order Sweet Shrimp at a sushi joint. The whole fried heads are fantastic.
