Frying turkey time?

I want to fry a turkey in peanut oil this year. I have the 40 qt pot and burner already.

I don’t have an idea on time to start cooking. If I have the oil at 350 and it’s a 20 lbs. bird, what estimated cook time is that?

Also, do y’all go by time or meat temp with a thermometer?

We fried a 14 pounder yesterday and it took about 30 to 35 minutes. Buddy was in charge of the cook and went by time. Came out pretty damn good.

I wouldnt suggest that. At that temp and a bird that big, the outside will be burnt before the inside is cooked. I typically dont fry bigger than 18lbs.

I wouldn't fry anything bigger than 15 pounds. Fry at 325 for 3 minutes a pound.

I agree with the others, you don't want to fry a 20 lbs. bird. I've usually done 13~15 lbs turkeys @ 350 for 3 to 3.5 minutes. Always took around 45-50 minutes.

I pretty much stick with this formula and it's been a winner.

This year we are going to also do a bone-in breast. I'm assuming the time/temp combo will work the same.

What he said. I stick with 13 lb. turkeys and shoot for 3 1/2 minutes a lb. at 325 degrees and they come out fine.

Only once did I have a 20 lb. turkey to fry and I lowered the temperature of the oil to around 290 degrees so it would not burn on the outside and checked for temperature and not go by time.

The lady I cooked it for was very pleased with the results since she found out on Thanksgiving day her oven was not working properly, and she was in charge of the turkey for a pot-luck dinner.
