Give me some ideas for purple hull peas

I have about 50 lbs of purple hull peas in my freezer. I love the standard peas and sausage over cornbread. It is a staple in my house this time of the year.
But I can't eat that every week.
Is there anything else that I can do with these?

I made a purple hull pea hummus this summer that was pretty damn good. Just your basic recipe except purple hulls instead of chick peas. Also purple hull pea soup with ground burger (or deer) is pretty tasty.

You can also venture into Indian recipes for peas (called lobia)...lots of deliciousness there.

Eat them as a side with eggs for breakfast. Put salsa or some kind of chili sauce on them.
