I'll be on the beach in 3 weeks, thank God. Bloody in the morning, beer all day, wine in the evening.

Two parts light rum, one part Malibu. Add some sprite and a splash of Blue Curaçao for color, garnish with orange, cherry, and pineapple if you have it. Add an umbrella if you really want to be gaudy.

HAWAIIAN MIMOSAS
yield: 1-8 COCKTAILS total time: 5 MINUTES
Hawaiian Mimosas – this easy cocktail recipe has just three ingredients and will make you think you’re on a beach in paradise. Pineapple, Rum, and Champagne is all it takes to make this delicious cocktail!
INGREDIENTS:
• Coconut Rum
• Pineapple Juice, cold
• Champagne or Prosecco, cold
• Pineapple slices and/or cherries, for garnish
DIRECTIONS:
1. Per mimosa: add one ounce coconut rum and two ounces pineapple juice to a champagne glass. Top with champagne and garnish with pineapple and/or cherry.
2. To make a pitcher: add 1 cup coconut rum, 2 cups pineapple juice, and an entire 750mL bottle of champagne or prosecco to a pitcher. Add pineapple slices and/or cherries to the pitcher or glasses for garnish.

This is a variation of the famous Soggy Dollar Bar's Painkiller.

What the Sazerac is to New Orleans, the Painkiller is to the Virgin Islands.

2 oz of Malibu Coconut Rum
1 oz Orange Juice
4 oz Pineapple juice

Mix it with some simply lemonade with blueberry. Throw in some frozen blueberries.
