Brown the butter..... It's the key to great cookies.... Especially chocolate chip

I use the "Neiman Marcus Chocolate Chip" recipe (easily found on the net) and make about 12 dozen around Christmas to hand out to the mailman, garbage collectors, neighbors, etc.
The whole story behind the recipe is BS, but it is a good cookie recipe and my go-to for chocolate chip.

And after you make the dough, chill the dough. Many recipes leave this step out for some reason.

I still love the Toll House recipe on the back of the bag of choco chips, add chopped pecans and short the flour about a tablespoon for a thinner chewier cookie. (can add another 2 tablespoons brown sugar too for more molasses flavor if no molasses on hand if ya like molasses)
I use dark brown sugar instead of light and add some fresh ground nutmeg, only like a 1/2 teaspoon so its kinda hidden but present.

My students won first place with this recipe a few years back
Ingredients:
1c Butter, softened
1c White sugar
1c Light brown sugar
3 Eggs
1t Vanilla extract
2c All-purpose flour
½c Cocoa powder
1t Baking soda
½t Salt
½c White Chocolate Chips
¼c Milk Chocolate Chips
Directions:
1. Heat oven to 325 degrees F and line baking sheets with parchment paper.
2. In the bowl for a stand mixer add the butter, sugar and vanilla and cream until smooth.
3. Add the eggs one at a time with the mixer on low and allow each egg to incorporate. Beat until
light and fluffy.
4. Sift the flour, cocoa powder, baking soda and the salt onto the parchment lined baking
sheets.
5. Add 1/3 of the sifted flour mixture into the butter mixture and incorporate on low, add another
1/3 and stir until combined. Then, add the final third and stir until combined.
6. Add chocolate chips then stir until incorporated.
7. Using a small portion scoop place cookie on baking sheet and gently press the cookie dough
down towards the baking sheet. Arrange 20 cookies per sheet pan 4rows across x 5 rows down.
8. Bake cookies for 8 to 10 minutes or until edges are dry and tops are slightly cracked.

The real winner is the judge, he gets to eat all the cookies. How do you become a judge is the question you need to be asking.

I don't bake much, but these are easy and people love them. Impossible to eat just one.
