My wife and I love Pinetta's. I get the lasagna, she gets the veal parmesan. Yes the service is slow, yes it is dark and a hole in the wall, and yes it comes across as a little dingy. I still love it though and have never had a terrible experience there the over 2 dozen times I have eaten there. Don't expect to eat there in under an hour, and you'll be fine.
I don't get the butthurt about Pinetta's. Is it BR's best restaurant? No. Does it have BR's best spicy red sauce? Possibly. Is it an enjoyable, unique dining experience in BR with above average Italian food? Yes.

Wow! This has been an interesting thread. I appreciate all of te tips. The gf's mom picked the spot, so I'm sure the hazards are known. Personally, having eaten my fair share of MRE's in less than desirearble conditions, it will be difficult to offend me. I love a good spicy red sauce, so I hope I'm in for a treat. At this point I believe it may be between the eggplant or veal but that's based on you guys reccomendations only. Thanks again!

They also have chicken parm which several of my friends and kids have gotten and it is equally as good. If you like spicy red sauce and don't mind the old nola vibe of the place you will be happy with it because the prices are excellent. They also have good wines and a bar. But be prepared to wait a bit because they do not take reservations and they are a bit slow on service.

I used to go there years ago when the old Balboas? owned it. The old guy would sit by the kitchen door and smoke like a train. All the male waiters were good. I liked the waiter named "Lawson". He was my waiter. I could be in line waiting for a table and he would hook me up, cause I tipped him really well everytime I went. Drank the Melini Chianti. Was $8.00 a bottle then. I always got the shish-ka-bob plate with a Pinetta salad with anchovy. Wayne's bakery fresh rolls with butter. Awesome times.
Now it sucks. The shish-ka-bob is made of different meat and just different. Not good. Service sucks and don't even bring a complaint to the chicken shite owners cause they're no help. They're the problem. Far as I'm concerned Pinetta's closed back in 97 and is gone forever. Pretenders there now. Just my two cents.

I actually don't mind Monjuni's but my FAVORITE red sauce is the one at Little Village. The sauce on that lasagna is outstanding.
I gave Pinetta's a try and went in optimistic because at the time, all I had heard was good things. Yeah, I know that getting Spaghetti isn't exactly "original" of me.. but if such a basic dish was not good, I found it telling. It was like crushed tomatoes and water. I want my sauce to be a real sauce.. not watery with a hint of tomato. It wasn't a deeply cooked red sauce at all.

O.k. Sicilian check.
My Sicilian mother has a Sicilian patient who has been making her sauce for years. Every year she gives her 24 large Mason jars with 3-4 ingredients.
Water, tomatos, basil, salt, sugar...maybe a little craked black.
(I didn't count water) 4-5
This is the best sauce there is. This is the only sauce there should be. Any Sicilian will agree with the basic premise of these statements.

My Sicilian mother has a Sicilian patient who has been making her sauce for years. Every year she gives her 24 large Mason jars with 3-4 ingredients.
Water, tomatos, basil, salt, sugar...maybe a little craked black.

That's all mine is. Maybe a bit of fresh chopped oregano but that is all the ingredients you need. Really light.

I've heard very, very mixed/conflicting things about Pinettas so it's towards the bottom of my BR restaurants to try list.
FWIW I don't like sweet red gravy at all so idk if I'd like Monjuni's sauce. I once tried a red sauce recipe from a HS teacher I had and it called for 2 cups sugar
. And this woman is an Italian from Chalmette! The sauce was too sweet for my taste. I've always heard to add maybe a tablespoon at most of sugar to cut the tomato acidity...but that recipe make me learn I like spicier red sauce for Italian cooking, I.e. lasagna and spaghetti.
I've noticed as I've gotten older, the more I love heat/spice in my food. I could eat something with jalapeños and it not affect me too much. Or put hot sauce on my red beans and not be phased
. Or even just adding some spices/herbs really kicks up the flavor sans sodium. I don't like bland food at all.

LL it must be a preference thing because my least favorite sauce is Little Village. It tastes like Ragu jar sauce to me.
I add crushed red peppers to my sauce at home iluv and it is wonderful.

I like a salty , spicy meat sauce with peppers, onions ,garlic, and mushrooms simmered for quite a while.( sometimes artichoke hearts )

Pinetta's is old Baton Rouge nostalgia..... have not been there since it changed owners. Was a great place to bring a date back in the day. The waiters would ease over to the store next door and drink 1/2 pints of Vodka..... you have to love that!!!!!

Did they ever clean that place, or is it still kept so dark that you can't see the nastiness? It's been years since I've been, so hopefully they have.
