Good Etouffee recipe

I know, first you make roux!

I find myself with tons of shrimp these days and I have never attempted to make Etouffee. I like mine without tomatoes, but will consider recipes with the devils apple in them.

There are several crawfish etouffee recipes in the cookbook. Just sub in shrimp for crawfish. My favorite is the Plantation Cookbook entry.

Make a stock with your shrimp or crawfish heads. It makes a world of difference.

Check out Acadiana Table.

And for an etouffee, your roux shouldn’t be too dark. Just a nice tan to bronze.

John Folse has a good ettouffee recipe but it does include tomato.

Acadiana Table classic crawfish etouffee

Lowder family recipe

Both of these are good, basic recipes. Just use shrimp instead of crawfish if that’s your preference.

I can’t understand why anyone would downvote his recipe.
I made it after our last boil and it’s fantastic exactly like he does it.
