Meatball Stew is not difficult to make. There are recipes you see that'll have Ritz crackers crumbled up in the meatball and a lot of other crazy ingredients and steps, but it's very simple. I use pure beef meatballs that are seasoned with salt and pepper. Make a roux, add celery, bell pepper, onion and garlic and cook on a medium fire. After the veggies are cooked down, add beef or chicken broth til the liquid is half way up the side of the pot and bring to a low boil. Let the stew cook for about 45 minutes, stirring occasionally, then drop a dozen meatballs (raw) into the stew and drop the fire to low and cook on a very low boil with a slight crack in the lid, for another 45 minutes til the meatballs are done. Check em once in a while to make sure they're not sticking and if they need extra liquid you can add more broth. Finish with finely chopped parsley and serve over rice. Potato salad, corn maque choux, cooked carrots and cole slaw all go extremely well with meatball stew.. And yes, you can drop your potato salad in your bowl of meatball stew.

Yeah, Ninaja's recipe is good, but I add some ground pork and leave out the slices of bread. His Chicken Sauce Piquante is righteous.

Cooking a meatball stew. What does everyone prefer. Chicken stock or beef stock?

Yeah I leave out the bread also and fry the meatballs instead of bake them. Also peel and quarter about 5 potatoes and add when put meatballs back in stew for final hour.
