Going to grill some chops for Mother’s day coming up. Need something simple that I can soak them in overnight for lunch on Sunday

You don't need to soak them in anything. Just season them really heavy, put them in a ziploc bag overnight and grill the next day.

Simple? Italian dressing and balsamic vinaigrette salad dressing. I usually eyeball it for like a 60/40 mix. A little more Italian and a little less balsamic.

Pork is so flexible. It's a blank canvas. Pull it at 140F. All of the previous suggestions are good.
Try Teriyaki and lots of garlic. Grilled, it enhances the smoky flavors.

This reminded me that Montreal steak seasoning is also good. Finish with a good basting of Jack Miller's.

I love Jack Miller’s. Grew up over there. However, for pig chops, season with SPG and baste liberally and often with Pig Stand basting sauce. Profit.

Alessi Italian/Asian Fusion Sweet and Spicy Sauce plus red pepper chili crisp, usually cube the pork and do skewers but whole is good also. Can get both at walmart

I use Stubbs pork marinade overnight, and it comes out fine.
I also use the pork version for chicken.

I have used KC Masterpiece Classic Steakhouse marinade on pork for years. I dont really like marinated steak but on chops and pork loin its great. Marinate over night. Everyone I've introduced it to loves it.

I like their marinades as well. I usually use their bbq sauce on smoked items as well.

I salt the day before, season right before cooking. I am simple these days. Salt and pepper works for me. Sometimes I'll put a pork rub if I want a BBQ flavor.

I'm the same. S&P and then throw a dallop of garlic and herb butter on top after pulling off the grill, or if you're cooking in a pan, baste with butter, garlic and herbs
