Good sides with crawfish etouffee?

Any good suggestions for side dishes with crawfish etouffee? I want to start eating it with a side dish so that the etouffee lasts longer when I make it.

Any good combinations?

why not? i had it as a side with crawfish-stuffed bell peppers once and it went really well.

Do a 1/2 and 1/2. Gris Gris' favorite place, Don's Downtown in Laffy, does this about as good as anyone. 1/2 etouffee' and 1/2 fried crawfish tails on the plate.

Serve the etouffee' on short grain rice

Make a crunchless potato salad on the side

Either red or white

Great idea! But I would probably end up mixing that with the etouffee.
