Paint with evoo, then salt/pepper. Finish with balsamic.

Roast them on baking sheets at 400 for 20-30 minutes.

When it looks like this, keep cooking! This is pretty, but it wasn’t done enough.

Use the eye test, for sure. They should be pretty much falling apart. If you're feeling frisky, some crispy bacon bits on the top to finish is also good. You can really finish however you like - bacon bits, bleu cheese crumbles, soy sauce, eel sauce, etc.

I like them painted in a dijon mustard with a little olive oil. Roasted until they are crispy on the outside.
I have also been using "everything but the bagel" seasoning on my roasted veggies so next time I will add that to the top.
(works well with brussel sprouts as well)
