We do a fish fry for Christmas night to change it up and I have a few filets left over that I’d like to try and grill to change it up.

Looking for ideas on how to do it.

I have all kinds of seasonings in the cabinet along with Worchestshire, Hoover Sauce, Dale’s, Lusco’s shrimp sauce. So it’s pretty much wide open on the options.

Any help would be appreciated.

Use the catfish for gumbo. Apparently it’s all the rage.

Melt a little pat of butter and sautee some garlic for a few minutes, then add more butter to make a garlic butter sauce. Lay some foil down on the grill and spray it with a little Pam. Season your catfish with salt, lemon pepper and a little creole seasoning and lay it on the foil Baste with butter garlic sauce. To test for doneness take a dinner fork and stick the tines into the thickest part of the fillet for 3 seconds, take it out and touch it to your lips. If it's a little warm the fish will be done.

Either grill or blacken the catfish, then top with a Pontchartrain sauce

Cook down minced garlic, diced onions and green onions in butter. Add heavy whipping cream, dash of favorite Cajun seasoning, and stir over medium heat until sauce thickens. You can also add shrimp , crawfish, or lump crabmeat to the sauce and serve over fish

catfish are not for consumption by humans. They are bait fish for crab traps and to clean crap out of bodies of water.

Jees cj. One would think you don't like them.

OP yes you can and they will be good. Melt some butter in a sauté pan and season the fillets with whatever you like (Cajun seasoning, blackening seasoning, garlic salt and black pepper, Worcestershire, soy sauce, Chinese spices, Adobo seasoning - whatever) and then lightly sauté the fillets. Try to only turn them once. Some will very lightly flour them and that is good. We cook them this way a lot. You can eat them just as they come out of the pan, or make a shrimp cream sauce, or crab with butter, or whatever to put on top of them.

Unlike cj, I like catfish a lot. Oh and someone else downvoted you cj - not me, but I thought about it.

I’ve lived within 25 miles of the catfish capital of the world my whole life. I’ve loved it since I was little lad. I just tend to stick to frying it and leave the grilling to professionals.

Nah. Most of my family is in Yazoo City.

Are you Italian with that many relatives in the Delta?

Italian? Nope from a long line of poor dirt farmer people. Most of my cousins stayed in the Delta. A few of them are big time farmers now.

If you have a Foreman grill or a knockoff like ours, they work well for "grilling" catfish.

My man, no use in burning wood or charcoal for a 3 minute cook. Hit those fillets with some Tony's, red pepper and paprika. Throw them in a buttered skillet and cover for a minute or so. Flip before it browns too much and cook it to your preferred level of done.

Bronzing is a great way to do catfish. Melt half stick butter. Pat dry filets and sprinkle liberal amounts blackening season. Cook skin side down for 4 minutes to get some color. Then flip and cook thru serve over garlic smashed or cinnamon sugar smashed sweet taters. Make quick sauce w little butter shot of Worcester and lemon juice. Good luck
