I've been asked to cook off 25-30 lbs of chicken wings for a Superbowl party this weekend. I usually fry or use the Alton Brown steam/bake method; however, the wife has suggested that I grill them on my Primo grill. I'm thinking the Primo will probably be faster and less messy. So I picked a 7lb bag of chicken wings yesterday that I'm going to cook tonight as a test run.

Any tips or recipes? Do you sauce grilled wings as you would fried wings or do you baste them?

I dont grill, boil in crab boil about 2 days before the game. Marinate in bottles of Frank hot sauce for 2 days, then put them in the oven about 15 min before you want to eat them.. best wings you will eat

this is what I do for about 4 lbs of wings

marinate the wings with a couple of table spoons of melted butter with one bottle of Louisiana hot sauce for at least 15 minutes in the fridge (the longer the better)
Preheat the grill and get it nice and hot
While the grill is preheating I usually pour the chicken into a big bowl and put some dry seasoning on it, like tonys, cayenne, onion powder, and garlic powder.

then I throw them on the grill until they are nice and crispy and serve with a bottle of Louisiana wing sauce.

I throw the wings on the grill unseasoned. I try to aim for a 350 degree fire. Let them cook for about 45 minutes. Then I take a bottle of Frank's Hot Sauce and a stick of butter and let that melt together in a sauce pan. When the wings are done, I put them in a mixing bowl and toss them in the pepper butter sauce.

Serve with your favorite dressing and vegetables.

This. Only difference is i smoke them, indirect heat. And closer to 325 deg. But, i love smoked chicken.

Sometimes I also do a sweet heat type dry rub first.

Get a big bowl.

Dump a bottle of Dales seasoning and a bottle of LA or Crystal hot sauce let them marinate for 15-20 minutes. Grill them for 20-25 on a fairly hor grill and eat them. KISS

this is the answer,
Ive been singing priases of boil and broil for a year now.
Boil for 15 mins... then broil for 15-20 mins.. I dip in sauce afterwards... serve.
Best wings you'll ever eat.

I may give this a shot, the boiling may help render off some of the fat and the seasoning may penetrate the meat better.

Boil and broil is definitely the ticket. My sauce I broil in consists of:

Stick of butter
Small bottle of Lea & Perrin's
Large bottle of Louisiana Hot Sauce
Small bottle of Tabasco
Couple tablespoons of minced garlic

How long do you boil them and do you soak afterward?

Marinate them over night in 1/2 part Italian dressing and 1/2 part hot sauce. Grill em till they get charred a little.

Boil for a bout 15 min in crab boil, then marinate them overnight in a bottle of Franks hot sauce. Broil the next day for about 15 min and they will be incredible

So I boiled the wings in Zatarians crab boil for 15 minutes. I then refrigerated the wings without the Red Hot. After the wings had cooled I placed them on the grill. Cooked at 400-450 until I got a bit of char and the skin crisped. I then tossed the wings in Frank's Red Hot and served with ranch dressing.

All said, the wings were very good. Very tasty and the meat practically fell off the bones. The crab boil flavor was very subtle. I may add a bit of seasoning to the wings when they hit the grill next time or do the Red Hot soak as was recommended. Thanks for the tips!
