Grilled Shrimp Recipe - Marinade

I was gonna do with this one, it seems solid:
1 cup olive oil
1/4 cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

Looks good to me. I might add some onion powder, but I just love that shite.

Sounds good to me. Just don't put any fricking Italian dressing in it. Report back with pics and review please.

Acid could "cook" them a bit. Don't know if 2 hours would do it.

I was thinking about adding the lemon juice about 30 mines before I cook to the marinade to avoid that.

Saw someone suggest on Food52 that 20 minutes was the max for sitting raw shrimp in lemon. I've never found that marinating shrimp before cooking them has done much more than just seasoning them right before because if you add acid, the texture is affected. I just toss them in a mixture before I put them on the grill. I don't think they soak up much of anything without an penetrating ingredient and those cook them.
Another suggestion I saw was to use lemon zest in the marinade rather than the juice and spritz them with juice after cooking. The lemon zest sounds like a good idea to me. I love it as an ingredient and in many cases more than lemon juice unless I really need the acid to balance something.

OK, I'll add zest and spritz on the grill but I'm gonna marinade. It's for my soonsoon to be father in laws birthday and I want them to think I put in some effort
