Yeah, after being burnt once on a bad container I always check the date now and get the freshest one.

Someone just gave me a bunch of onions and I was going to prep it and freeze it for when I need it. I like the idea of making my own Guidry’s trinity mix. Anyone know the proportions?

The mix is mostly onions. Hardly any bell pepper or celery.

Guidry is trash. How long does it take to dice veggies? Five minutes? If you are horrible with your knife work I could see this toddler mix helping, any serious cook should entertain this abomination of a trinity.

Yeah that’s why I was wanting to make my own mix and freeze. Thought I may get ahead of the game prep wise if I had a good trinity ratio frozen and ready to go.

Frozen onions let off a lot water. I dont use them.

There are now a couple different companies making them I've seen in Rouses and Guidry’s also makes a just onion and a just celery in addition to the mixed. I’ve used them once or twice but prefer my own. I just enjoy working on my knife skills and have good knives and cutting boards which make all the difference in the world.
I grow most of my own herbs too and am looking to buy a salt dome and maybe a black pepper farm in Vietnam to keep it all under my umbrella.
I did for the first time last year dehydrate some of my garlic I grew and put it through a spice grinder and made my own garlic powder. Worked too so I’ll do more this year-easy to do. I’m not that guy though-I just do it because I’m an enthusiast-not a hipster neck beard.
And what’s the old boy above got against pickled pigs feet? Good snack in the deer stand.

I mostly chop my own just because I enjoy the knife work and getting a chop in a specific size according to the dish. But I've definitely used Guidry's on occasion. Here lately I came across a competitor of theirs and I really like them alot more than Guidry's
Louisiana's Choice
Made in Hammond and it's head and shoulders better than Guidry's. A way more consistent chop (no chunks or stems) and better ratio of bell/celery/parsley to onions. When you open it, it just SMELLS like fresh chopped trinity.

They have machines that do it all. I've been inside that place a few times. As soon as you walk in its like being maced in the face from the amount of onions that are cut. Conveyor belts all over bring the amounts together.
You can brown the vegetables just make sure it's a real fresh container. If you see any liquid don't buy it.

I've used it before but I always feel like the finished product tastes better when I chop my own trinity.

Louisiana's Choice is my preference. Guidry's has way too much onion. You can just look at the color of Louisiana's Choice and tell the proportion is much better than Guidry's.
I find these work well when you don't feel like chopping.

I understand that some people use it for convenience, but I am not a fan. To me, everything in the container has a uni-taste; like one big, funky onion-ish thing.
I enjoy chopping while I sip a cocktail.
