Gumbo for 30 people. How many cups of rice to I need to cook?

If you have oven space, a five pound bag in a large cafeteria pan or a whole chafing foil tray is perfect for 30 people.
5lb bag of rice
5 qts water
4 tbsp salt
1. Preheat oven to 350
2. In the large foil tray, open the bag of rice.
3. In a pot, bring the water and salt up to a rolling boil.
4. Carefully pour water onto the rice and then gently stir it to “level out the rice”.
5. Immediately cover tightly with foil and bake for 45 minutes.
Easy peasy. Yes, it is a little much but the ease of the proportions make it worth the extra 0.50 cents of rice you will use.

Raw Rice, 4 cups, but rice is cheap, do 6 to be sure and make fried rice with the leftovers.

First figure out how much cooked rice per person. 1/2 cup? 1 cup?
Raw rice basically swells to 3X to make cooked rice.
So if you pick 1/2 cup per person….
1/2 cup rice X 30 people = 15 cups cooked rice
15 cups cooked rice / 3 = 5 cups raw rice
Take it a step further….
1 pound of raw rice is 2.33 cups
5 cups of raw rice / 2.33 = 2.15 pounds of raw rice
So for 1/2 cup rice servings, you need 5 cups or 2.15 pounds.
Personally, I think 1/2 cup of cooked rice in a bowl of gumbo is more than enough. But if you want to be safe, increase the number.

5-6 cups of dry rice should be fine.

thats a shitload rice my baw. I would assume most people probably use a quarter cup of rice in a normal bowl of gumbo
