Healthy/Low Carb(ish) Gumbo

Just make the roux as usual. The amount of flour you'd have per serving would minimal.

I was contemplating this last night. I cannot stand cauliflower anything. Is it frowned upon to eat gumbo as a soup and just go without rice?

That's a strange recipe. No seafood stock, but uses beef broth in seafood gumbo. The sausage is chicken and apple. Way too thick for my taste.
Gumbo can be delicious without rice. Just load up on the proteins or eat it with a sweet potato like some of the Cajuns do.

Don’t bother with cauliflower rice. Just boil regular ole cauliflower and serve it over that.

If you want low carb gumbo, eat it wouthout the rice / potatoe salad. Otherwise , skim the grease as it cooks. Don’t change anything else.

I don't think gumbo is necessarily unhealthy or something that you should even try to make a "healthy" version of. The flavors will suffer immensely.

Do NOT do this. My wife tried this once and it came out horrible. The almond flour does not bind with the oil like regular flour does and it gets gritty.

How low carb we talking?
You could eat it without rice.
Or serve it over cauliflower.
Sweet potatoes do really well as a base. No completely low carb but would certainly cut down from the carbs in the rice.

I use avocado oil but that is about as healthy as my gumbo gets. Well, its seafood so that's kind of healthy.

I've been going keto for a long time, I also test me blood sugar frequently. I see no reason to have rice or any other starch in gumbo, it just leaves room for more gumbo in your bowl. Of course the flour in the roux is a carb, however, when I have gumbo I see zero spike in blood sugar and I'm still in ketosis.
I have spoken to a nutritionist and we theorize that either the percentage of flour in a bowl of gumbo is too small (as an earlier poster suggested), or the process of browning the flour to such a dark color lowers its actual food value.
So the only thing left is the caramelized onions, but since it doesn't spike my blood suger, I'm ok with it.
So enjoy your riceless and potatoless gumbo, it's a break from most no carb foods.

A cup of flour has 95g of carbs. Dispersed through your fat and stock, how many grams of carbs can you be ingesting in a bowl? Make a normal gumbo, have 1 bowl, just dont eat the rice. Make it your only carbs for the day

I put very little rice in my gumbo anyway. It disturbs me when I see people put so much rice in that all you see is rice with a little bit of gumbo, almost jambalaya like. I mean, they have no gumbo left to dip the potatoes salad in.
