Hog Head Cheese & Crackers Snack

Enjoying some spicy Hog Head Cheese I got at Bailey's in Laplace yesterday.

Looks good, except for the amount of gelatin I see in it. I love hog's head cheese. Just not a fan of the ones with large amounts of gelatin.

I think Bailey's HHC is pretty good. Better than anything I've had in NOLA anyway. I always get some when I go there.

Make a pot of grits, dish up some hot buttered grits into a bowl, then plop a thick slice of HHC on top. Let it melt a bit, stir into the grits. Eat and be happy.

That's why I love the HHC and STC (spicy turkey cheese) from Bourgeois' Meat Market. I seriously doubt they use gelatin at all. I've yet to find a cheese that even comes close imo.

Jerry Lee's in Central and Soprano's in Livonia are the same way. The consistency is more that of peanut butter than jelly, if that makes sense.
For my preference, the texture is superior without the use of a lot of gelatin.

There is no added gelatin in proper hogshead cheese. The gelatin within comes naturally from the pig skin.

Kartchner's Grocery in Krotz Springs has great HHC
