Homemade Hush Puppy Recipes

I love hush puppies. I'm not crazy about the frozen ones in the grocery store. I love when a restaurant makes their own, though that doesn't necessarily mean they're always good. I haven't been that successful myself in finding a recipe I really like, but I've just found one that I find very good and a little different.
This method is from Brenda Gandt who some of you may have seen on Facebook. She cooks mostly country family food and she's not real good on measuring because she makes things over and over again and just "knows" what the texture should be.
Here's a video on YouTube where she fries chicken thighs and makes hush puppies. The hush puppies start about about the 8:30 mark.

Basically, she slices an onion in thin half moons. She tosses that in salt and pepper and 3 to 1 self rising cornmeal and flour (all purpose or self rising). She tosses that in some buttermilk, but not a lot. It's a prett thick mixture. The onions sort of stick out of the hush puppy like spider legs that are crispy. I've made them a few times and made them again last night. Still trying to get the best texture, but they were very good.
She fries her eggplant and green tomatoes and other vegetables similarly. She puts just enough buttermilk on "chunks" of the vegetable to get them wet. Then she puts mostly cornmeal with a little flour until the vegetables are all covered and pretty dry and then deep fries them. I fried some eggplant last week using that method and it was very good. I've always fried eggplant and green tomatoes sliced, but I like this way better. She claims they are less greasy and I agree. They are very crispy and you can fry more at one time.

I've never searched for them. They could be in the Link cookbook. I enjoy those as well.

A really good hushpuppy is wonderful, and her's look wonderful. I have good friends from down in LA (lower Alabama) and was in that river just a few days ago.

I have some of the mixture left and now that I've watched that video again, I'm going to add more onions and a bit more buttermilk. Mine were really good, but a bit thicker than I thought they should be. The crispy coated onions that stick out and fry are so tasty.

I’ve been trying for years to duplicate the hush puppy that Drusilla made during their heyday, mid- late ‘80’s. Without success That was a great hush puppy crispy outside lighter on the inside green onions had a bacon flavor to it.

It's usually just me and the Mrs. and all I need is about 6 hush puppies. With the mix above some water and diced onions I'm good to go. No eggs or buttermilk needed.

We like to add jalapeños to the Jiffy recipe that can be found online. Light, fluffy, sweet, and a little heat. Always a crowd pleaser.

I use a cup of self rising cornmeal mix, 1 egg, 1/2 jalapeño pepper, 1 or 2 green onions (each minced) and @ a 1/3 cup of corn kernels if I have them. Add a little salt and usually a bit of sugar...then enough buttermilk or whole milk to make the batter handle right.
I’ll use two small spoons to drop the batter in 325 degree oil. Fry until golden.

My favorite is Drusilla's. I'm terrible at frying anything because I never do it but I absolutely love fried seafood when done right.

I have yet to find a better hushpuppie than what the Warehouse No1 restaurant in Monroe puts out.

I like the sound of that recipe. I really love a good hush puppy but haven’t really tried to perfect a recipe for home.
I know you said you aren’t crazy about frozen ones, but when I do a big fish fry and need to cook a couple hundred hush puppies, I go with frozen so I can focus on the fish and other stuff.
I like this brand best of the ones available to me locally.

Not homemade but if you like Don’s hush puppies, you can go to their restaurants (at least in Hammond) and buy their batter, ready to cook. It’s in a container and ready to fry. Just use the two spoon method and drop them in hot oil. Used to be fairly inexpensive, don’t know about now.

My wife uses Martha White's cornbread mix packet. Add green onions, garlic powder, one egg, and a little condensed milk. It sits in the fridge while I fry the fish and fries. Pull the HP mix out and add a little beer. If you want to spice it up, use jalapenos. Everybody asks for the recipe.

Recipe
Ingredients
1 pkg. “JIFFY” Vegetarian Corn Muffin Mix or 1 pkg. “JIFFY” Corn Muffin Mix
1 egg
1/3 cup milk
1/4 cup flour
1/2 cup onion, finely chopped
oil for frying
Step 1
Preheat oil in deep fryer to 375°F.
Step 2
Combine muffin mix, egg, milk, flour and onion. Mix well.
Step 3
Drop by teaspoon into oil. Fry 2 minutes on each side or until golden brown. Remove and drain on paper towel.
