Hotel pans/steamer pans fitment question.

It’s been a long time since I’ve been in a restaurant kitchen. I’m looking to make a portable pizza prep station. I’d like to use hotel pans. Can I use a full size with 12” cross bars and smaller sizes inside?
Or any other ideas?
I’d like to be able to have individual lids, different sizes, etc...

Are you planning on icing the full pan to keep temperature down ? You probably dont need the crossbars. Make sure the full pan is deep enough. Find a restaurant supply store and ask whomever is there for help figuring out you plan.

Maybe, it was a thought for hot days to at least mitigate the 90+ heat of the summer occasionally

Definitely going to need a crossbar to secure the 9 pans.
Your best bet for the support pan is a full size chafer replacement pan (replacement for the pan that comes with a chafer).
They are designed slightly larger and can accommodate standard full size pans.
