How can you thicken up red beans?

throw some butter in at the end to give a more creamy texture.
whisk some cornstarch and water, then add to pot
make a roux at beginning then saute trinity

If you want to do it real fast sprinkle in a bit of baking soda. Can't vouch for the taste, though.

I wouldn't add flour to red beans. You could get that plain flour taste. Mash up some of the beans, turn the fire off and stir in a stick of butter.

instant mashed potato flakes...
They are pretty muchtasteless, so they absorb the excess water/fluid without changing the taste of the beans.
you have to stir them a lot though, to keep them from getting lumpy
but this is a really good quick fix

one 16oz can of NOLA style red beans in a food processor with a pack of hot dogs does the trick
