How do you freeze shrimp?

I typically dont. I find they get mushy.
But I guess if I had to...like fish. Submerged in water.

I de-head them and lay the unpeeled tails in a single layer on a sheet pan covered in parchment paper. Freeze over night and then put the 'IQF' shrimp in a freezer bag. They stay good for 1-2 months that way. Make stock with the heads and freeze that in disposable Tupperware containers for future use.

I've always pulled the heads and pack the tails in gallon freezer ziplock bags. I cover with ice water and suck all the air out with a straw before zipping the bags. They keep for months. May have to double bag them if leaks develop.

Freeze in water. Most all shrimp bought have been previously frozen. They freeze very well.

we used to use Ziploc bags, until the tails would prick a hole in it causing ice slicks in the bottom of the freezer. we bought some cheap stackable plastic containers. Fill with be-headed shrimp, fill w/water, leaving head room and freeze. works better than bags.

Usually in water, double bagged. I pop the shell off the head but leave all the good stuff attached to the tail.

I freeze them in plastic containers with water to cover, leaving room for expansion. Then, I cover the top with plastic wrap so there are no air bubbles to prevent freezer burn on any that float up. They're good for a long time that way. I've frozen them, head on, like that with great success. Made bbq shrimp last week with some 9-12 head on frozen shrimp from last August. Couldn't tell they'd been frozen at all.

Great ideas. I'm tired of the tails poking holes in my gallon freezer bags and getting all over the freezer.

Depending on how much you get, buy a dewar of liquid nitrogen and IQF yourself. When frozen in nitrogen, they will keep for a year and defrost as a fresh shrimp. If its just a few pounds, freeze in water.

If you're old school, you put em in a recycled milk carton, then cover w/water, freezer-tape the end closed, and freeze. I generally use squat, 3 or 4 cup plastic lidded containers in lieu of recycled milk cartons.

lable the size and date

When I thaw them out I run cold water over them and as the fall off from the shrimpsicle I peel them. Been doing it like that for 20 years and never had a shrimp go bad.

This is a little time consuming, but a glaze and freeze like fish. Head off and shell on.
If you are freezing you fish in water, you are doing it wrong.

Also don't rinse the shrimp freeze in shrimp water if possible...
