How do you season your steak before cooking?

Beef. And what is your favorite cut?

I season with ground salt and pepper and just a dash of Montreal’s.

I traditonally have liked the bone in ribeye, but a recent ‘small’ porterhouse has me re-evaluating that choice.

On a hot grill: 3-4 mins first side, 3 mins second side, rest for 5 minutes. Medium rare FTW

2” thick ribeye
Kosher salt and black pepper
Sous vide at 124 for a few hours
Sear in smoking hot cast iron for 1min each side

Lots of kosher salt and cracked black pepper
Reverse sear
Cook to 125 internal
Rest to 130
Sear hot for min on each side

Garlic (depends on steak quality)


After

Clarified garlic butter and or finishing salt (fleur de sel or the like)

There are likely better methods, but I follow Jamie Oliver's method in this YouTube video.

I like NY Strip cooked medium well with some element of spice on the side, like a dip or a rub.

Rotate between S&P, Montreal steak, or the Weber steak seasoning- that stuff is good.

Favorite cut is ribeye, bone in.

why do people put so much salt on a good piece of steak? i dont get. i like to taste the meat, not a salty taste
