I omit the rice and toss in spinach and mushrooms with my beef instead. I add the sauce to this mixture and let it cook down a bit.

Layer of meat/spinach/shrooms, sprinkle a mixture of cheese (I like to use a combo of provolone and mozzarella with a little grated parmesan added), another layer of meat mixture, then topped with more of the cheese.

I haven’t made them in awhile, but no tomato sauce for me. I have a recipe somewhere from a friend’s lifelong Cajun housekeeper. Onions, bell pepper, seasoning and raw eggs. They had almost a creamy texture. Best I’ve had though mine never turn out as good as hers, but very good. No rice, but you could add that if you want. No pre-cooking of the bell peppers. They cook plenty in the oven.

ETA:
They had a very large family!
1 / 1
STUFFED BELL PEPPERS

6 pounds ground meat
3 onions, chopped
4 bell peppers, chopped
11 whole bell peppers, halved
6 heaping teaspoons minced garlic
1 ½ sticks butter
2 cups Italian breadcrumbs
4 eggs
salt and pepper to taste

Brown meat and vegies until done. Drain very well. Add butter and breadcrumbs. Mix. Add beaten eggs one at a time. Stuff the peppers. Bake at 350 until heated through about 20-30 minutes, longer if they’re cold when going into the oven. (I bake a bit longer.)

Makes 22 ½ peppers

They freeze well.

Cut the tpp off my bell pepper, clean them and parboil them for 3 minutes m.

Make a rice dressing, stuff bell peppers, top with bread crumbs/parmesan cheese mix, bake till the bread crumbs start to brown.
