Say I fried some fish in a fry daddy...

Can I just leave the oil in there until next time? Do I have to refrigerate it? Is cooking oil life based on amount of times used or time?

I don’t fry stuff very often, but don’t want to throw all this away after just one use.

I think theres a very popular place in memphis that fries burgers in grease that has never been changed.....

Just looked it up. Dyers Burgers on Beale St. 100 year old grease.

Wait for it to cool, then strain it and put back in bottle. That’s why I do. Repeat, maybe 5/6 times, then dispose.

I have the filtration deep fryer and use my oil around 4-5 times before changing.

Dyer's Cafe
"Dyer’s famous burgers are still prepared in the “ageless” grease generated by the cooked burgers each day. This Dyer’s tradition generated myths for over 90 years. The legend has it that the famous Dyer’s grease hasn’t been changed for over 40 years. Truthfully, the method used to cook Dyer’s famous burgers produces new grease from the cooked burgers which is strained, sauteed and flavored every day"

This is pretty much how I do it. I have a very fine mesh strainer that I pour the grease through to remove almost all the fish fry/corn meal.

I'll pour the grease in a separate container on its own and reuse it maybe 3 times before disposing of it.

You can use the oil again to fry fish but I wouldn’t use it to fry chicken or fries. But fist decant the oil and get rid of the old batter on the bottom of the pot and replace with a little extra new oil.

I would go all new if I were frying fries or chicken unless you like fries and chicken with fish flavor.

if you cut up some fresh potatoes for fries and cook them in the fryer after fish/seafood the grease will be cleaned by the potatoes

You will know when the oil is old. It begins to smell BAD when heated up. That lets you know it is time to change it. Most people describe the smell of sweaty gym socks as what it smells like.

If you do not get that often it is more work than it is worth. Saving may make sense for some people as louisianans use fried food as a major part of their diet

As long as you don't get your oil too hot to where it smokes, it's good for 3 or 4 cookings. For me and the wife, I can get three cookings of fish, french fries and hushpuppies before I change my peanut oil. I strain it in a plastic coffee canister and stick it in the freezer.

The best thing in the world to strain grease - an old worn out T shirt. Cut you a piece to fit inside a metal strainer and there won't be a crumb in your oil when through straining it.

It’s a fry daddy. Dosent exactly use the same amount of oil as a turkey fryer.

Get new oil.
