How to freeze raw oysters?

Got a half gallon that I fried about half of. Would like to save the rest for a seafood gumbo next week. Can I freeze em? If so, how do I thaw them and when do I add to gumbo? Thanks for the tips my friends

I get a gallon of shucked from GI and freeze them. I divide into what I want per container then I pour the juice over them and cover completely. If I’m short on liquid I mix a little water. Just make sure they are completely under. I portion 12 into containers and fry through out the summer months.

Cover in water, add a little salt, then completely seal. They will good in the freezer for at least 6 months. Defrost under water or let slow thaw in the fridge.

Put the oysters in an ice cube tray and top with the liquor. You don't want them in a big mass that takes a long time to freeze. Freezing quickly prevents the formation of ice crystals.

As long as they are completely sealed, they would be fine. No air bubbles.

Thats what I do, I use ziploc snack packs. They less than a quart size. I then put all the little bags in a bigger ziploc bag.

I use the ziploc plastic containers so they stack well in the freezer and I reuse them.

I wouldn’t do it. Messes with the texture too much.

I had a pint that I couldn’t use timely. Stuff them in the freezer. Some months later, I defrosted and fried hesitantly. They were fine.

Ate some raw at the camp the other day from Wilson's that my uncle brought. I asked him when he stopped at Wilson's. He said they were frozen at his camp from the last trip. I couldn't tell at all. He said he just tossed the container full of the juice in the freezer.

Thanks for the replies everyone. I wont be able to come back to report, cause I went ahead and ate em raw. Have to buy some more for the gumbo.
