Anyone have a good hushpuppie recipe you use?
I searched through but couldn't find anything, maybe I just suck at using search

cut up an onion real fine
cut up sliced jalapeno peppers
add a little bit of mustard
add one can of creamed corn
pour box of jiffy corn bread mix and mix all these ingredience until the mix is firm enough to be able to scoop with an ice cream scooper.
drop into hot grease until they are golden brown.

1 cup self rising corn meal
1 large egg
1/2 jalapeño pepper, minced
2 green onions, diced fine
2 T sugar
Buttermilk
Combine first 5 ingredients and add enough buttermilk to form a stiff batter. Drop by small spoonfuls into 325 degree oil. Fry until golden, likely 2 minutes or so. Drain, lightly salt and enjoy.

This is the old Ralph and kacoos recipe that I said I was gonna post some time back. Ralph Davis, one of their original cooks from back when they were in the oxbow on false river came up with this recipe. I couldn't find the original that he had written down for my mom years ago. I called her and she told me she threw the thing away cause it's the same damn recipe that's in the Ralph and kacoos cookbook.
So this ain't too much of a secret, but these are the best! It's a large recipe, so adjust accordingly.
5 pounds cornmeal
2 pounds flour
3 1/2 cups sugar
2 1/2 tablespoons salt
1/4 teaspoon soda
3/4 cup baking powder
1 teaspoon red pepper
1 teaspoon garlic powder
1 cup chopped green onions
4 cups evaporated milk
4 1/2 cups water
5 eggs
2 tablespoons parsley
Mix, spoon, and fry.

A recipe that calls for 5 pounds of cornmeal and 2 pounds of flour has 1/4 teaspoon of something? How would you cut that down proportionately?

Oil for deep frying
Mix all dry ingredients in a large bowl. Add onion, milk, water, eggs and parsley and blend well. Refrigerate until ready to use. Heat oil. Spoon batter into oil, frying until golden brown. Makes 30-40 hush puppies.
I found this on cooks.com. I think that was a misprint on 1/4 tsp soda!

Best pups out there r my old mans:

3 Tsp Baking Powder
Chopped Green Onion
1 Diced Jalapeno
1 Egg
Garlic Powder & Salt (to taste)
Spoon into the grease. Keep a cup of water nearby.. Clean your spoon between every dip to make sure the batter slides off the spoon into the grease. We usually cut the fire after the fish/fries and cook the pups as the grease cools.

Yeah I'm thinking that was a misprint.
I just copied what was in the cookbook. I do know though that Ralph used a ton more sugar in the original recipe than what is called for in the cooks recipe. That may be their "newer" version of the hush puppies. But the recipe in the book that I posted (minus the error on the baking soda) is the one Ralph came up with when they were on False River years ago. I would imagine the sugar won't affect much of anything but flavor though.
